This afternoon, I decided to whip up a batch of savoury Wild Leek Drop Biscuits to have with dinner. These are super easy and delicious. It only takes a small handful of Wild Leek leaves. Enabling us to harvest this endangered plant responsibly. Leaving the bulbs behind, allowing the plant to continue to thrive.
Wild Leek Drop Biscuits
Ingredients
1/3 butter or shortening
1 ¾ cups all-purpose flour
2 ½ teaspoons baking powder
¾ teaspoon salt
1 cup milk
Small handful Wild Leek leaves
Optional – handful of grated cheese and pinch of one of my favourite spice blends (Cedar, Sage and Sweetgrass)
Directions
Preheat oven to 450 degrees.
Mix all dry ingredients together (flour, baking powder, salt, and spice blend). Cut butter or shortening into dry mix. Add handful of cheese, mix well. Add milk and blend. Drop dough by spoonsful onto greased cookie sheet.
Bake for 10-12 minutes, should be a light golden brown.
